Pesto is one of my favourite foods – so full of flavour, and really versatile – it goes with pretty much everything! This is a really easy pesto recipe that you can make in just a few minutes. I’m obsessed with vegetable spaghetti at the moment, and it’s absolutely delicious with a tablespoon of this pesto stirred in. Yum! You can also enjoy it with salads, meats and fish


  • 100g fresh basil
  • 50g finely grated parmesan cheese
  • 30g pine nuts
  • 100g extra virgin olive oil
  • pinch of salt
  • 2 cloves garlic, crushed


  1. Heat pine nuts in a dry frying pan over a medium heat for approx. 5 minutes, or until you can smell them toasting and they turn a light golden brown
  2. Mash the garlic to a smooth paste and add to a blender
  3. Add half the basil leaves to the blender with the garlic and blend for 15 seconds
  4. Add the rest of the basil leaves and, whilst blending, pour the olive oil through the feed hole at the top and blend until smooth (if your blender doesn’t have a feed hole, just add the olive oil gradually and blend in between)
  5. Add the parmesan cheese and toasted pine nuts, and blend for another minute

You can store any leftover pesto in the fridge in a jar. It’s best to pour a little olive oil on top to help it store longer. It also freezes well
