Roast pumpkin butternut squashThis is delicious alongside any meat (try cutting into wedges or chips), in a salad, or with cous cous, rice or quinoa and other roast veg or salad.


  • 500g pumpkin, cut into cubes, wedges or chips
  • 2tbsp olive oil
  • 1 clove garlic, crushed
  • Black pepper & thyme to taste


  1. Toss all ingredients in a bowl until the pumpkin is coated
  2. Lay the pumpkin out on a baking tray
  3. Cook in the oven at 180C for 20-25mins or until the pumpkin is soft and golden brown
