This is delicious alongside any meat (try cutting into wedges or chips), in a salad, or with cous cous, rice or quinoa and other roast veg or salad.
- 500g pumpkin, cut into cubes, wedges or chips
- 2tbsp olive oil
- 1 clove garlic, crushed
- Black pepper & thyme to taste
- Toss all ingredients in a bowl until the pumpkin is coated
- Lay the pumpkin out on a baking tray
- Cook in the oven at 180C for 20-25mins or until the pumpkin is soft and golden brown
